A Raspberry Quickie

Some weekends there just isn't enough time to get baking and so today I've thrown together a quick fresh cream and raspberry cake.  Nothing fancy, but made all the easier for having a Victoria Sponge cake in the freezer ready and waiting to be tarted up a little.

Not A Recipe

This is just a suggestion rather than a recipe.  I simply took a small pot of double cream and whisked it with 2 tablespoons of icing sugar.  To this I added a punnet of fresh raspberries which I had mashed up with the back of a fork.

Fill your cake with the raspberry creamy gorgeousness and liberally dust the top of the cake with icing sugar.

Bish, bash, bosh, job done!
