Sunday Afternoon Tease
Some weekends there just isn't enough time to get baking and so today I've thrown together a quick fresh cream and raspberry cake. Nothing fancy, but made all the easier for having a Victoria Sponge cake in the freezer ready and waiting to be tarted up a little.
You can read my post on how easy it is to freeze cakes in my very first Sunday Afternoon Tease post.
Not A Recipe
This is just a suggestion rather than a recipe. I simply took a small pot of double cream and whisked it with 2 tablespoons of icing sugar. To this I added a punnet of fresh raspberries which I had mashed up with the back of a fork.
Fill your cake with the raspberry creamy gorgeousness and liberally dust the top of the cake with icing sugar.
Bish, bash, bosh, job done!

Looks delish. A contender for the first round of GBBO for Victoria sponge with a twist! x
