Glorious Mud Cake!

It is a gloriously hot sunny day in my part of the world and Andy Murray is playing in the final at Wimbledon.  The tension is too much for me, so I have come to sit in the garden for a while and contemplate chocolate cake.  Naturally I have a large glass of fruity Pimms to keep me company.  

The recipe for this Chocolate Mud cake comes from the wonderful Jo Wheatley who won the 2011 Great British Bake Off competition.  I've been following Jo's blog for a while now and I love her down to earth recipes that always have a little twist to them. 



 A few months ago I got a copy of her first book, A Passion for Baking and have made quite a few of the recipes.  I'm tempted to do a Julie and Julia type thing and work my way through the whole book and blog about my progress.

Glorious Mud Cake

This is the first time that I have made a chocolate mud cake, but it got a big thumbs up when we road tested it last night after our BBQ.  It's lovely and moist  but not sickly sweet.  I topped it with some chocolate butter cream; I had some left over buttercream and added a little melted Bournville chocolate to it.  It gives the buttercream an attractive speckled appearance. 


You can find the recipe for the Chocolate Mud Cake on Jo's blog.  I made it with my curly girly yesterday, and it was difficult to stop her from eating the mix before it got into the oven!
